A cozy fall brunch, scrounged from the pantry, for a rainy fall day when going to the store just wasn’t in the cards. Pumpkin orzo and smoked gouda toast.
-1 carton Trader Joe’s pumpkin soup
-1/2 bag orzo-like pasta (you can see mine is little stars)
-Cinnamon, nutmeg & sugar
Boil the TJ’s pumpkin soup, add spices to taste. Add orzo pasta. Lower heat, simmer - stirring frequently - until pasta is soft. Soup will boil off and become thicker and creamier; add more soup if necessary.
For toast: cover bread with grated or thinly sliced smoked gouda. Place under broiler until cheese begins to toast. (Optional: add coarse mustard or butter spread under cheese).
